I feel like tacos tonight!! Tacos tonight!
How do you go wrong with tacos? I submit you cannot! (I may be biased, I've got a very happy tummy right now.) Don't have a photo, due the massacre that occurred once they were done, but here's how it all came together:
Taco 'Meat'
1tbsp Olive oil
1 Diced sweet onion
1 Diced green pepper
1 Diced Pasilla pepper
1 Diced Anaheim pepper
1 cup of diced button mushrooms
1 Package of Yves Taco Stuffers
1/2 cup of salsa
dash of hot sauce
Plus shell and toppings
Saute veggies in olive oil until tender, then throw in the last three ingredents and saute until warm. (So fast and easy!)
Of course everybody has there favorite toppings, we like to take sour cream, pico de gallo, avocado, lettuce, cheese and attempt to stuff it into a tiny little taco shell on top of the taco 'meat'...then laugh as it explodes upon first bite!
Hope you enjoy this supper healthy and low fat version of a staple meal.
*Tip - to keep your taco mixture from drying out I leave the lid after adding final ingredients.
