This morning we had french toast again. Only this time, as I went to add the vanilla, I realized I was out. Eeep!! Fortunately I had a few vanilla beans tucked away. Normally I find them to be not worth the trouble, nor the cost. However, they've saved my butt (and recipe) more than once. Should you find yourself in this situation simply slice the bean open and scrap the seeds out. Generally speaking 1 bean is equal to 2 teaspoons of extract.
To further stretch the vanilla goodness, add the used bean to a container of sugar or a bottle of vodka to infuse them with the yummy flavor.

It's amazing! You may want to double or even triple it to feed all the boys though. ;)
